I chose rolled oats because they give this recipe a creamier texture while still retaining a little bite. Fresh Strawberries

Honestly, this can be replaced with any seasonal fruit. I always prefer using seasonal fruits, and strawberries were in season when I made this bowl of goodness. You can use apples, peaches, grapes, whatever fruit you like!

Almond Milk and Water

I always have a sensitive stomach, but it was in 2021 that I was diagnosed with Erosive Gastritis. I make my own Almond milk at home, although I keep a tetra pack handy for emergencies. I cook my rolled oats in water first only because my stomach is extremely sensitive. You don’t need to follow that step if your stomach can digest the heavier oats easily.

Using Honey The Right Way

Honey contains naturally occurring enzymes and other delicate compounds. Prolonged exposure to high temperatures can affect some of these components. So rather than cooking the honey along with the oats, we stir it in once the oats have been cooked and taken off the heat. This also means you get to taste the honey itself. With a seasonal rare honey like Karvi Wildflower, letting its individual flavour shine adds a very interesting dimension to the dish.

Cocoa Honey Oats With Fresh Strawberries

Ingredients
  

  • 1/2 Cup Rolled Oats
  • 1/2 Cup Water
  • 1 Cup Almond Milk
  • 2 tbsp  Unsweetened cocoa
  • 3 tbsp Karvi Wildflower Honey
  • 1 handful Mixed chopped nuts
  • 1/2 cup Chopped Strawberries
  • 3 to 4 Sliced Strawberries
  • Pinch of salt

Method
 

  1. In a medium saucepan, add water and let it come to a boil. Once the water starts bubbling, add the rolled oats and almond milk. Cook over medium heat.
  2. Once the oats are soft and creamy, add cocoa powder and a pinch of salt. Stir well until the cocoa is fully incorporated.
  3. Add the finely chopped strawberries and the roughly chopped nuts. Cook until the strawberries soften. Once the oatmeal comes to a boil, turn off the heat.
  4. Transfer the cooked oats to a bowl. Add the honey and mix it in well. Garnish with the sliced strawberries.
  5. Do not add honey to direct heat. This makes honey lose its naturally occurring enzymes and other delicate compounds.
